    I'm not too sure about my favorite opening but my favorite ending theme would be to Evangelion. Fly Me to the Moon, a classic jazz standard. My favorite version is the one by Frank Sinatra or Ella Fitzgerald but Megumi Hayashiba sings it nicely too... too bad I'm not a big fan of high pitched voices :p

    I dont know if all you youngins remember this but I always thought the 2nd half of Outlaw Stars ending song was perty good also Cowboy Beebop is a good one.
